Homemade Fudge Pops.

These are just like store-bought and really easy to make!!

You need a popsicle mold or some dixie cups and sticks.

1 pkg. Jello-pudding mix, I used vanilla and added some unsweetened cocoa to make chocolate.

2 T. sugar (so the pop won't become icy on the outside)

2 cups of milk (amount on the box)

I wanted to add marshmallows, but forgot, next time I'll try it!!

Stir it until it becomes pudding consistency, add it to your molds, and in 3-5 hours enjoy your pops!!

Homemade Granola Bars.

I love making these for a quick grab-n-go snack.

4 cups of quick oats

1 stick of butter (melted)

1 cup of peanut butter
(you can use crunchy p.b. if you want peanuts, but with little ones around I opt out of that)

as much honey as you want for sweetening (not for children under 1)

Any add-ins you want, raisins, cranberries, the possibilities are endless.

--Mix it all together, spread it out on a cookie sheet lined with wax paper and sprayed with cooking oil, as thin or as thick as you want, I like to put it in the freezer to set up enough to cut it into bars. Once chilled slice into bars. I wrap each bar with wax paper and tape the ends with masking tape and place them in a freezer container in the freezer. Wonderful snack and hardly any mess or fuss involved!

Woweee.

So a lot has happened since last November!


Has it really been that long since I've posted an entry? Woweee!


I feel like I should start all over, give my blog a sort of face-lift if you will, but that will have to wait.


Here's a little of what we've been up to around here.


1) First and foremost we welcomed our baby girl, Ella Mae, into our family on April 21st, 2010. What a blessing and pure joy she has been to our lives.


2) Lawrence is now almost 20 months old. Oh the stories I could bore you with! He's a genius {I'm not just saying that 'cause I'm his Mommy and obligated to}.

3) Our life has been pretty speed bump free over the past year. We are truly blessed and living the good life that God is providing for us.

4) Right now they are redoing our road and it is a Mess. They are doing a complete tear out. Lawrence is loving all of the dirt movers right outside our front door. The other morning he didn't even want to eat breakfast. He just kept pointing at the door and saying, "See, see, truck, truck." Oh, he knows what makes the noise, "beep, beep", you cannot fool his little toddler brain!!

5) Our garden has been quite fruitful this year, thanks to all of the hubs hard work. We've been able to can tomatoes and green beans, as well as freeze corn and eggplant. We've been using the green peppers and jalepenos as fast as we get them. Also, there is cabbage ready and onions. I'm hoping to make some pepper jelly, apple butter, and applesace as the harvest season progresses.

6) Mr. Frugal {i.e. the hubs and baby daddy} has been given the chance to teach at a local technical college near our house and what a blessing this is! We are able to save, save, save into a savings account. We sure will be able to afford that bigger house we've been dreaming of sooner rather than later!
